basil tomatoes

This recipe is delicious and super easy to make. It is a perfect side dish to a fry up, can be made into a pasta bake sauce, pizza base or a marinade for some meat. You can even have it cold as a salsa dip for some nachos with cheese and other homemade dips. 

This sauce has such a tasty flavour it can be used for so many things, and it's also a great alternative to shop brought tomato ketchup; due to the lack of sugar, it has only natural occurring sweetness. Not only is this recipe simple to make it is also very good for your health, tomatoes contain high amounts of vitamins E and C.

Ingredients

  • Olive oil (1-2 tsp)
  • Fresh cherry tomatoes (150g)
  • Basil leaves (10g)
  • Oregano (1/2 tsp)
  • Chilli flakes ( Pinch)
  • Medium garlic clove (1)
  • Salt and Black pepper to taste

Method

To begin, get a small saucepan and put in the olive oil, and warm it. Once it's warm, add in your cherry tomatoes add a good pinch of salt, some chilli flakes and fresh ground pepper. Peel your garlic and smash down until it's crushed, add it to the seasoned tomatoes, put the lid on and cook on low heat for 12-15 minutes. 

Once the tomatoes have been cooking for 15 minutes, take off the lid, rip up the basil leaves and chuck them into the pan. Add in the oregano and put the lid back on. Cook for 5 minutes further until the tomatoes have burst and softened down. 

Once the tomatoes are all cooked, taste and season if it needs seasoning. A great idea with this delicious stewed tomato is to put some crusty sourdough bread in a frying pan, drizzle with some olive oil once cooked and pour the tomato over the toast and sprinkle with some mozzarella, enjoy!
