Bowl of Traditional Italian Sùgoli Grape Pudding

Sùgoli is a sweet pudding that brings the flavors of the Italian countryside to life. Originating in Northern Italy, particularly in Emilia-Romagna and Veneto, this thick, pudding-like dessert is made from grape must, sugar, and flour, traditionally prepared during the grape harvest. Rooted in the principles of cucina povera, Sùgoli uses simple, seasonal ingredients and was originally made without sugar. Over time, it evolved to include sugar, resulting in a dessert that's both sweet and tangy. Served warm or chilled, Sùgoli is often enjoyed on its own but can be enhanced with a dollop of whipped cream, a sprinkle of cinnamon, or paired with biscotti or sweet wine for extra flavour.

Ingredients

  • Red grape juice, black grape juice, or grape must (1 Litre)

  • All-purpose flour (120g)

  • Granulated sugar (50g Sugar)

  • Zest of 1 lemon

  • 4 cloves

Method

In a saucepan, mix the flour and spices together. Gradually whisk in the grape juice, stirring constantly to avoid lumps. Add the sugar little by little, tasting as you go to reach your preferred sweetness. Bring the mixture to a gentle boil over low heat, stirring to prevent it from sticking. Once it boils for 2–3 minutes and thickens, remove from heat.

Let it cool for 10 minutes, then pour into your chosen mold (a bowl, rectangular container, or pudding molds). Allow it to cool at room temperature for about 30 minutes, then refrigerate for 6–8 hours. Enjoy chilled!
